One of my friends invited me over to try our hands at candy making since its something we’ve both wanted to try for a long time! We ended up making Caramel Vodka lollipops, recipe adapted from here. They turned out better than either of us could have expected!

Recipe:
- 1/4 cup Caramel Vodka
- 2 tbsp cold water
- 3/4 cup sugar
- 3 tbps corn syrup
- 1/8 tsp salt
- Mix together all ingredients until combined. Heat on medium, stir until boiling
- Get candy mixture to 300°F without stirring
- Pour onto tinfoil (or silicone mats, if you have them) and insert sticks, rolling once to coat.
Since neither of us have a candy thermometer we tried this method. It was fairly simple to follow, but in the future I think a proper thermometer would be better.
Second Attempt!
We made the lollipops again, but this time we used a candy thermometer. I highly recommend it! The candy was harder because we got the temperature more exact. Also, I suggest if you use tinfoil to spray it with pam or coat it in a thin layer of oil!
